Varietals: 100% Pinot Noir

Origin: The Pinot Noir is a grape variety of northern origin, it is in the heights of the valley of the Aude, in the foothills of the Pyrenees that we selected our vineyards. Freshness, mild temperatures, and precipitation make it possible to avoid too fast a maturity. 

These vines have an average age of 10 years. They are carved in "Cordon de Royat" (trellised) and "Guyot" (trellised). The yield is relatively low. It is of the order of 50 hectoliters per hectare. The soils are clayey-limestone on the terraces, close to the soil of origin of this grape variety.

Winemaking: Pre-fermentation maceration of about one week and fermentation of one week at controlled temperatures. 25% of the final cuvee is aged in oak barrels for 6 to 9 months.

Tasting: Visual examination: Dark color with ruby shades. Olfactory examination: Fragrances of red and black berries mixed with floral notes, with a delicately woody and vanilla flavor. Gustative examination: In the mouth, this wine is very complex and fruity, rich, long and fat. It has flavors of crushed black fruits (blackberry, blackcurrant, cherry), jam. Coated and melted tannins. Unlike many Pinot Noirs of the Pays d'Oc, this one is not dominated by a heaviness and excessive overmature.
