Origin: This SAUVIGNON BLANC is a blend of wines produced in the Gard region, near Nîmes (terroir, minerality), cuvées from the Hérault plains north of Béziers (roundness, complexity, fruit), valley of 'Aude (fruit, complexity) near Carcassonne, region that has many similarities with the valley of the Loire where the Sauvignon vine comes from (calcareous soils, cold climate but with lots of light, precipitation to avoid drought) . Finally, part comes from the East-Audois (cold region: acidity and freshness).

Winemaking: The grapes are harvested early in the morning to avoid the heat of the day. They are quickly transported to the winery where they are pressed, after a short period of "skin maceration" of about 8 hours. Alcoholic fermentation in stainless steel tanks at low temperatures (15 to 18 ° C) for maximum fruit and freshness. The contact with the air is avoided to the maximum in order to preserve all the aromatic potential of the grape. Then, this SAUVIGNON WHITE is raised a few months on fine lees, under a carbonic atmosphere, to maintain the freshness of the wine. Early bottling. The malolactic fermentation does not take place in order to preserve the natural acidity of the wine.

Tasting: - Visual examination: Pretty pale yellow color.

- Olfactory examination: Rich and aromatic wine, it has intense flavors of fruits and vegetable notes coming from the Sauvignon grape variety ("varietal" flavors): gooseberry, passion fruit, green tomato, wild strawberry, lemon. It also has floral nuances (honeysuckle), as well as a mineral perfume of "flint" due to limestone soil.

- Tasting Review: This wine is very fresh with a good acidity and a natural tip of CO² that brings freshness. A rich, round finish, which gives it an interesting balance. This wine is very easy to drink, very fresh, as an aperitif or during a meal.
